Ingredients

 Eggs3 Small
 25 g / 1 oz butter
 2 tablespoons thin cream or top-of-the-milk
 75 to 125 g / 3 to 4 oz lean cooked ham or bacon, chopped small
 Mayonnaise2 Tablespoon
 125 g / 4 oz frozen mixed vegetables, cooked and cooled
 Black pepper and a little salt
 Tomato or cucumber slices

Directions

GETTING READY
1. Grease medium quiche or flan tin with butter.

MAKING
2. In a mixing bowl, combine butter and cream.
3. In a saucepan, melt the butter and scramble the eggs in it until cooked but yet soft.
4. Return cooked eggs to the bowl and combine with ham, mayonnaise, vegetables and seasonings.
5. Turn the mixture into the flan case and pack firmly.
6. Decorate the flan with tomato and cucumber slices.

Finalizing
7. Cover the flan with plastic wrap and refrigerate until set.

SERVING
8. Cut into wedges and serve cold.
