Cold Salmon With Remoulade Sauce Recipe

| Hard-boiled eggs | 3 , hardboiled | |
| Egg yolk | 1 , beaten | |
| Vinegar | 1 Teaspoon | |
| Olive oil | 3 Teaspoon | |
| 1 tsp prepared brown mustard | ||
| Sugar | 1/2 Teaspoon | |
| Juice of 1/2 lemon | ||
| Horseradish | 1 Teaspoon | |
| 2 lb. salmon steak | ||
| White wine | 4 Cup (16 tbs) | |
| Peppercorns | 8 | |
| Bay Leaf | 1 | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Mix hard-boiled eggs, egg yolk, vinegar, olive oil, mustard, sugar, lemon juice, salt, pepper and horseradish.
Wipe and place salmon steak in large frying pan.
Pour wine over; add peppercorns and bay leaf.
Poach 20 to 30 minutes.
Drain; refrigerate
