Cold Salmon Recipe
One of my favorite recipes is the cold salmon one I have given out here. This cold salmon dish is great to eat during the summer months. Follow these steps!

2 pints (1 litre) water
1/4 pint (150ml) wine vinegar
1 sliced onion
1 stick celery, chopped
1 carrot, grated coarsely
1 heaped tablespoonful freshly chopped parsley
1 teaspoonful black peppercorns
Sea salt to taste
Directions
Put the first seven ingredients into a large saucepan.
Boil for about 30 minutes, adding more water if the level goes down too much.
Strain and pour back into the pan.
Add salt to taste and stir.
Put the salmon steaks carefully into the warm stock which should cover the fish. (If it doesn't, add more water.) 5.
Bring to the boil and simmer for about 3 minutes.
Very carefully, using a large fish slice, turn the steaks over without breaking them.
Simmer for another 3 minutes and then turn out the heat.
Leave the salmon to grow cold in the liquid.
It will continue to cook very slowly as it cools down.
