Cold Rice Recipe
Ingredients
1 avocado, diced
Juice of 1 lemon
1 1/2 cups (375 ml) white rice, cooked
1/2 cup (125 ml) brown rice, cooked
1 onion, chopped
2 tomatoes, diced
1 celery stalk, chopped
2 tbsp (30 ml) chopped parsley
4 oz (113 g) canned tuna, drained
2 tbsp (30 ml) oil
1 tbsp (15 ml) vinegar
1 tbsp (15 ml) chili sauce
Salt and pepper
Directions
– Sprinkle avocado with lemon juice.
– Combine avocado and other ingredients in a large salad bowl, toss and serve.
