Grease a 900 g/2 lb loaf tin and arrange 2 rashers of bacon in the base.
Chop the remaining bacon.
Peel and finely chop the onion.
Fry the bacon gently, then add the onion and allow to soften in the bacon fat for about 5 minutes.
Drain well on kitchen paper.
Combine the bacon, onion, minced beef, breadcrumbs, parsley, herbs, salt, pepper and the Barbecue Cook-in-Sauce.
Mix well, spoon into the loaf tin and level the surface.
Place in the oven and cook for about 1 1/2 hours.
Remove the tin from the oven and allow to cool.
When cold, place the tin in a refrigerator.
To serve, turn out of the tin and cut into slices.
Serve with salad.
