Ingredients

 
Noodles- 8 ounces
 
Fresh Asparagus- 3 cups, cut into 1-inch pieces
 
Bell Pepper- 1 cup, chopped, any color
 
Iceberg Lettuce- 5 cups, torn into bite-sized pieces
 
Tomatoes- 2-3medium, coarsely chopped
 
Salt- to taste
 
Pepper- to taste
 
Beef Broth- 1/3-1/2 cup canned, undiluted
 
Olive Oil- 2 tablespoons
 
Garlic- 1 large clove, pressed
 
Parmesan Cheese- as needed

Directions

MAKING
1) In a large kettle of boiling water, place noodles and cook, according to package directions.
2) When two minutes are left for noodles to cook, add asparagus and bell pepper.
3) Drain the noodles along vegetables.
4) In a large bowl, place lettuce and tomatoes and season to taste and set aside.
5) In a saucepan, heat together broth, oil, and garlic until hot.

FINALIZING
6) Pile the noodles over the lettuce.
7) Stream hot-oil dressing over lettuce mixture, and toss well.

SERVING
8) Sprinkle Parmesan cheese on top and serve.
