Cold Fruit Pudding Recipe
Ingredients
| Mixed dried fruit | 24 Ounce | |
| 1 cup unsulphured raisins | ||
| 3 tart apples, peeled, cored, and quartered | ||
| Water | 1 1/2 Quart | |
| Brown sugar | 1/2 Cup (16 tbs) | |
| Cinnamon stick | 1 | |
| Potato starch | 1/4 Cup (16 tbs) | |
| Cold water | 3 Tablespoon | |
| Plain yogurt | ||
Directions
1. Wash the dried fruit in warm water, drain, and put in a bowl with the raisins and apples. Pour the water over all. Add sugar and stir well. Let stand overnight.
2. Transfer fruit and liquid to a pan, add the cinnamon stick and bring to a boil. Simmer slowly until the fruit is tender but not mushy.
3. Strain off the cooking liquid into a second pan. Mix the potato starch with the cold water and stir into fruit liquid. Bring to a boil, stirring until the mixture thickens and is clear, about 3 minutes.
4. Put the fruit in a serving bowl, pour the hot pudding over all, cool, and chill.
