Cold Curried Tuna And Fruit Recipe
Ingredients
1/2 cup plain low fat yogurt
1 tablespoon curry powder
1/4 teaspoon each ground cumin and coriander
1/8 teaspoon ground cardamom
1/8 teaspoon sugar
2 cans water packed light tuna, drained and flaked
1 large orange, peeled and sectioned, with sections cut into thirds
1 cup fresh or drained juice packed pineapple chunks
1/2 cup seedless green grapes, halved
1/2 cup seedless red grapes, halved
1/2 cup sliced water chestnuts
12 large lettuce leaves, such as romaine
Directions
In a large bowl, combine the yogurt, curry powder, cumin, coriander, cardamom, and sugar; blend until smooth.
Add the tuna, orange, pineapple, green grapes, red grapes, and water chestnuts.
Toss together gently until the fruits are well coated with the dressing.
Chill in the refrigerator for at least 4 hours.
Arrange the lettuce leaves on individual salad plates and spoon the tuna and fruit mixture on top.
