Cold Chicken With Walnut Sauce Recipe

Ingredients
500 g/1 Ib boneless chicken cut into 1" pieces
2 cups water
1/2 carrot roughly chopped
1/2 cup roughly chopped onion
1 flake garlic peeled and crushed
1 tbsp chopped fresh coriander/cilantro or parsley
1 bay leaf
1/2 tsp black peppercorns
1 tsp salt
3/4 cup shelled walnuts
1 1/2 slices white bread
1/2 tbsp paprika or Kashmiri red chillies
Directions
Place the chicken, water, carrot, onion, garlic, parsley, bay leaf, peppercorns and salt in a large saucepan.
Bring to a boil and simmer for 10 minutes or until the chicken is tender.
Let the chicken cool in the broth.
Strain.
Pick up the chicken pieces discarding the other ingredients and vegetables.
Reserve the stock.
Dice the boiled chicken into 1/4" pieces.
Set aside.
Grind the walnuts, bread and paprika together in a mixer with the reserved stock to make a smooth paste.
Mix the diced chicken with the walnut paste.
Place on a serving platter.
Sprinkle with some pepper.
