Cold Chengdu Noodles Recipe
Ingredients
| Noodles | 500 Gram, chilled | |
| Bean sprout | 75 Gram, blanched | |
| Onion spring | 1 , finely sliced | |
| 2 tablespoons very finely chopped ginger | ||
| 1 tablespoon very finely chopped garlic | ||
| Sesame paste | 1 Tablespoon (Sauce:) | |
| Peanut butter | 1 Tablespoon (Sauce:) | |
| 1 teaspoon peanut oil or cooking oil | ||
| 3 tablespoons black soy sauce | ||
| Sugar | 2 Teaspoon (Sauce:) | |
| Black rice vinegar | 2 Teaspoon (Sauce:) | |
| Sesame oil | 1 Teaspoon (Sauce:) | |
| Chilli oil | 1 Teaspoon (Sauce:) | |
Directions
Combine all sauce ingredients in a bowl, mixing well.
Add the noodles and stir to coat the noodles with the sauce, then add beansprouts and mix carefully with chopsticks or a fork, taking care not to break the sprouts.
Divide among 4 bowls and sprinkle each portion with a little spring onion.
