Colcannon Recipe
A traditional Irish Dish, It has a wonderful taste the perfect change from normal mashed potatoes

Ingredients
2 lbs potatoes
1 large head of cabbage
1 medium onion
1 stick of butter
salt
pepper
milk or half and half
Directions
Cut potatoes into quarters, and place into a medium sauce pan
add 1 cup diced onions to the top of the potatoes
add 2 cups chopped cabbage to the top of the onions
add salt, pepper and add just enough water to cover everything
Bring to a boil, once the potatoes are tender
add 1 stick of butter
mash everything together and add milk to ensure a good consistancy
stir with a spoon until smooth
serve as a side dish with your choice of meat
