Add remaining milk, tapioca, sugar, salt, water, and coffee.
Bring to boil over direct heat, stirring constantly.
Remove from heat.
Beat egg white until just stiff enough to hold shape.
Gradually fold hot tapioca mixture into egg white; cool.
When slightly cool, stir in vanilla; chill.
