Coffee-Cream Cake Recipe
Coffee can actually make any dish special. A dash of coffee and the dish comes alive. Add the much needed zing to your cooking. This coffee-cream cake is a wonderful treat that you would love to make over and over again.
Ingredients
Chiffon cake mix - 1 package
Cornstarch - 3 tablespoons
Sugar - 2/3 cup
Milk - 3 cups
Lemon rind – 1
Egg yolks – 3, slightly beaten
Vanilla - 1 teaspoon
White rum - 1/4 cup
Cold coffee - 1 1/2 cups
Whipped cream
Directions
MAKING
1) Take a 10 inch tube pan and prepare cake according to package directions. Cool completely.
2) Take a saucepan and combine in it sugar, milk and cornstarch. Add egg yolks and lemon rind. Blend well.
3) Cook over low heat until mixture becomes thick.
4) Remove from heat and throw away the lemon rind.
5) Add vanilla and mix thoroughly. Allow the mixture to cool completely.
6) Cut the cake into 4 layers.
7) Take a bowl and combine coffee with rum. Sprinkle mixture on each side of the cake layers.
8) Spread egg mixture between the layers.
9) Top the cake with whipped cream and refrigerate for about 2 hours.
SERVING
10) Place a cherry on top of cake, if desired. Serve immediately.
