Coffee Kisses Recipe
Ingredients
| 100 g / 4 oz butter or margarine | ||
| 50 g / 2 oz caster sugar | ||
| 150 g / 5 oz self-raising flour | ||
| 3 tablespoons strong black coffee | ||
| 50 g / 2 oz butter, softened | ||
| 100 g / 4 oz icing sugar, sifted | ||
| 1 tablespoon strong black coffee | ||
| Icing sugar, for dusting | ||
Directions
Beat the butter or margarine and sugar with a wooden spoon for 10 minutes, or in a mixer for 5 minutes, until light and fluffy.
Add the flour and coffee and mix to a stiff dough.
Place the mixture in a piping bag, fitted with a large star nozzle.
Pipe an even number (about 30) of small stars with the mixture, a little apart, on a greased baking tray.
Bake in a preheated oven for 10 minutes, until just beginning to colour.
Cool on the baking tray for 5 minutes, then transfer to a wire rack to cool completely.
To make the icing, beat together the butter, icing sugar and coffee until light and creamy.
Sandwich 2 stars together with a little icing, then dust with icing sugar.
