Coffee Date Muffins Recipe
Ingredients
| All purpose flour | 1 3/4 Cup (16 tbs) | |
| Baking powder | 2 1/2 Teaspoon | |
| Water | 1 Cup (16 tbs) | |
| Egg | 1 | |
| Salad oil | 1/3 Cup (16 tbs) | |
| Sugar | 1/4 Cup (16 tbs) | |
| 1 1/2 teaspoons instant coffee powder | ||
| Salt | 3/4 Teaspoon | |
| 1 8-ounce package pitted dates | ||
Directions
Sift the flour and the baking powder together into a mixing bowl; set aside.
Place water, egg, salad oil, sugar, instant coffee powder, salt, and dates in blender container.
Blend till ingredients are mixed and the dates are coarsely chopped.
Pour date mixture over dry ingredients.
Stir just till dry ingredients are moistened.
Fill paper bake cups or greased muffin pans about 2/3 full.
Bake in a 400° oven about 25 minutes.
