Ingredients
1 1/2 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/2 cup granulated sugar
1/2 cup Kellogg's All-Bran or Bran Buds cereal
1 cup cold strong coffee
1/4 cup vegetable oil
1 tsp vinegar
1/2 tsp almond flavoring
1/2 cup flaked coconut
Directions
Stir together flour, soda, salt, cinnamon and sugar replacement.
Set aside.
Measure cereal and coffee into a large bowl.
Stir to combine.
Let stand about 2 minutes or until cereal softens.
Stir in oil, vinegar, almond flavoring and 1/3 c. (90 mL) of the coconut.
Add flour mixture, mixing until well combined.
Spread evenly in greased 8 x 8 x 2 in. (20 x 20 x 5 cm) baking pan.
Sprinkle remaining coconut over batter.
Bake at 350°F (175°C) about 25 minutes or until cake tests done.
