Coffee Cakes Recipe
Ingredients
| 175 g - 6 oz margarine | ||
| 175 g — 6 oz caster sugar | ||
| Eggs | 2 | |
| Warm water | 2 Tablespoon | |
| Coffee | 2 Tablespoon | |
| 225 g - 8 oz self raising flour | ||
Directions
In a mixing bowl, beat together the margarine and sugar.
Beat the eggs separately and add a little at a time to the creamy mixture.
Dissolve the coffee in the warm water and add this to the mixture.
Using a metal spoon fold in the sifted flour and mix gently but well together.
Fill a baking sheet with cake cases and drop a tablespoon of the mixture in each case.
Bake in a pre heated oven until well risen and then cool on a cooling tray.
