Cod's Roe Recipe

Ingredients
1 raw cod's roe of 1 to 1 1/2 pounds
Warm water
Salt
Directions
When you buy a raw cod's roe, you must get the whole roe without the membrane having been broken.
Wrap the roe in a square of fine cheesecloth.
Drop it into warm, salted water.
Bring the water to a bubble very slowly.
Poach the roe for a half hour with the lid off the pan, so that you can keep an eye on the movement of the liquid.
Fast boiling water may burst the membrane.
When cooked, remove from water and allow to cool completely.
Next day, slice down in rings about a half inch thick.
Toss in seasoned flour and fry in butter.
