Codfish Cakes Recipe
Ingredients
| Potatoes | 1 Pound (Peeled) | |
| Salt cods | 5 Medium | |
| Eggs | 2 | |
| Butter | 2 Tablespoon, softened | |
| Prepared mustard | 2 Teaspoon | |
| Worcestershire sauce | 1 Teaspoon | |
| Pepper | 1⁄4 Teaspoon | |
| Cooking oil | 2 Tablespoon |
Directions
Soak cod in cold water 8 hours or overnight; change water twice.
Dice cod (should be 3 cups).
Cook cod and potatoes in boiling water till potatoes are tender, about 10 to 15 minutes; drain.
Beat with electric mixer.
Add eggs, butter, mustard, Worcestershire, and pepper; beat well.
Using 1/3 cup mixture for each, shape into 1/2-inch patties.
In skillet cook patties in hot oil till crisp and brown, 2 to 3 minutes, turning once. (Electric skillet 350°.)
