Codfish Cakes Recipe
Ingredients
1/2 pound salt cod, soaked overnight
Water
1 cup mashed potatoes
1 or 2 eggs
Freshly ground black pepper to taste
Butter or bacon fat
Flour or crumbs, if desired
Directions
1. Cut the cod into small pieces, cover with water and bring to a boil. Taste for saltiness; if excessively salty, discard the water and repeat until the water is almost fresh.
2. Mix the fish with the potatoes, eggs and pepper. Form into eight cakes and saute in plenty of hot butter or bacon fat. Or roll in flour or crumbs and fry in deep fat heated to 370° F.
