Salted dry codfish
 
Onion
 
Tomato
 
Vinegar
 
Johnny Cake Ingredients
 
Self-raising flour
 
Butter milk
 
Oil

Directions

Soak the salted dry codfish in hot water to remove salt and make it soft.

Chop onions and drizzle some vinegar over it.

Melt some butter in a pot, add chopped onions, tomatoes , scallion, thyme and anything else that you like.

By the time onions and other goodies are ready, codfish will be ready.

Remove the codfish from water and shred it.

Add the shredded codfish to the onions and let it simmer. Put the lid on.

While the cod fish simmers, prepare Johnny cakes.

Prepare a dough with self raising flour and buttermilk.

Shape the dough into small johnny cake.

Put a couple of crushed garlic in heated oil and then put in the Johnny cakes.

Turn them often and make sure they are brown on both sides.

Enjoy codfish and onions with Johnny cakes.
