Ingredients

 Butter2 Tablespoon
 All purpose flour2 Tablespoon
 Milk1 Cup (16 tbs)
 Sour cream3 Tablespoon
 Salt To Taste
 Pepper1
 4 thick cod steaks
 Watercress1 Bunch (100gm)

Directions

To make the sauce, put the butter in a large bowl and melt in the microwave oven for 1 minute on HIGH.
Sprinkle the flour over and stir well.
Add the milk, stirring constantly.
Cook on HIGH for 3 minutes, stirring with a hand whisk every minute.
Add the sour cream (creme fraiche).
Add salt and pepper to taste and stir thoroughly.
Rinse the fish steaks.
Sprinkle with salt and pepper on both sides.
Arrange the fish skin side outward in a round dish, leaving the center of the dish empty.
Cover and microwave on HIGH for 4-5 minutes, depending on the thickness of the steaks.
Remove the tough stalks of the watercress, rinse thoroughly, drain and puree.
Add the puree to the sauce and stir well.
Put the fish on a serving dish and remove the skin.
Reheat the sauce for 1 minute on HIGH.
