Ingredients
4 cod fillets, about 6 ounces each
Juice of 1 lemon
Salt
White pepper
2 tablespoons butter or margarine
1 medium onion, sliced
2 tablespoons chopped parsley
1/2 cup dry white wine
Shrimp Sauce
2 tablespoons butter or margarine
1 1/2 tablespoons flour
1 cup hot beef broth
1/2 cup dry white wine
6 ounces fresh mushrooms, thinly sliced
4 ounces fresh shrimp
2 teaspoons lemon juice
Salt
2 egg yolks
Garnish
Lemon slices
Parsley
Directions
Sprinkle cod with lemon juice; let stand 10 minutes.
Season to taste with salt and pepper.
Heat butter in large skillet.
Add fish; brown well, about 10 minutes on each side.
Add onion; cook until golden.
Stir in parsley.
Pour in wine; simmer 5 minutes.
Remove fillets to preheated platter; keep warm.
Reserve pan drippings.
Prepare sauce.
Melt butter in saucepan.
Stir in flour; pour in broth and reserved pan drippings.
Add wine; let simmer over low heat.
Add mushrooms and shrimp; simmer 15 minutes.
Season to taste with lemon juice and salt.
Remove small amount of sauce; blend with egg yolks.
Return to sauce; stir thoroughly.
Heat through but do not boil; yolks will curdle.
