Cod Baked In Tomato Sauce With Onions Recipe
This baked cod recipe with tomato sauce and onions is a simple and nutritious recipe for a fish preparation. Baked with a mix of cooked tomatoes and onions with garlic and hot pepper flakes, with cod fillets, the baked cod can be sprinkled with parley and served with poatoes and salad.
Ingredients
1 tbsp olive oil 15 mL
2 onions, sliced 2
4 cloves garlic, finely chopped 4
pinch hot red pepper flakes pinch
1 28-oz/796 mL tin plum tomatoes with juices 1
1 tbsp chopped fresh thyme, or 1/2 tsp/2 mL dried 15 mL
2 tbsp pitted black olives, optional Salt and pepper to taste 25 mL
6 pieces fresh cod, skin removed, 1 inch/2.5 cm thick (4 oz/125 g each) 6
1/4 cup chopped fresh parsley 50 mL
Directions
Heat oil in large, deep non-stick skillet.
Add onions, garlic and hot pepper flakes.
Cook gently until onions wilt.
Add tomatoes, thyme, salt and pepper.
Break tomatoes up with spoon.
Bring to boil and cook until thick, about 5 to 7 minutes.
Stir often.
Stir in olives, salt and pepper.
Pat fish dry.
Add cod to skillet and spoon sauce over top.
Cover and cook for 5 minutes, or until cod is just cooked through.
Sprinkle with parsley before serving.
