Ingredients

 1 16-ounce package frozen cod fillets, thawed
 Dry sherry2 Tablespoon
 Soy sauce2 Tablespoon
 Cornstarch2 Teaspoon
 Red pepper1/4 Teaspoon, crushed
 Cooking oil1 Tablespoon
 Garlic1 Clove (5gm), minced
 1/2 of a 16-ounce package (2 cups) loose pack oriental frozen mixed vegetables, thawed
 Green pepper1 Small, cut into thin strips
 Peanuts1/4 Cup (16 tbs), chopped
 Hot cooked rice

Directions

Cut fish into 1-inch cubes.
For sauce, stir together sherry, soy sauce, cornstarch, red pepper, and 1/4 cup cold water.
Set aside.
Preheat a wok or large skillet over high heat; add cooking oil.
(Add more cooking oil as necessary during cooking.) Stir-fry garlic in hot oil for 15 seconds.
Add mixed vegetables; stir-fry for 1 1/2 minutes.
Add green pepper; stir-fry about 1 1/2 minutes or till the vegetables are crisp-tender.
Remove the vegetables from the wok or skillet.
Add half of the fish to the hot wok.
Stir-fry for 3 to 5 minutes or till fish flakes easily, being careful not to break up pieces.
Gently remove fish from the wok.
Stir-fry remaining fish for 3 to 5 minutes.
Gently remove fish from the wok.
Stir sauce; add to the wok.
Cook and stir till thickened and bubbly.
Cook and stir for 1 minute more.
Return fish and vegetables to the wok; add peanuts.
Gently stir ingredients together to coat with sauce.
Cover and cook for 1 minute.
Serve immediately over hot cooked rice.
