Ingredients
1/2 cup butter or margarine
1 1-pound cod or halibut steak, 1 inch thick
1/2 teaspoon salt
1/2 pound mushrooms, sliced
2 tablespoons lemon juice
1 10-ounce bag spinach
Lemon wedges for garnish
Directions
1. In 12-inch skillet over medium-high heat, in hot butter or margarine, place fish steak; sprinkle with salt; cook, turning fish once, until fish flakes easily when tested with fork, about 10 minutes. With pancake turner remove fish to warm large platter.
2. To drippings remaining in skillet, add mushrooms and lemon juice; cook until mushrooms are tender, about 5 minutes, stirring frequently. With slotted spoon, spoon mushrooms into small bowl.
3. To remaining drippings in skillet, add spinach; cook 2 to 3 minutes, until just tender, stirring occasionally. Stir in mushrooms; heat. With slotted spoon, arrange spinach around fish, then pour liquid on fish and spinach. Garnish with lemon wedges.
