Ingredients

 
1 tablespoon lemon juice
 
1 tablespoon soy sauce
 
1/4 teaspoon garlic powder
 
Artificial sweetener to equal
 
1 teaspoon sugar
 
8 ounces cod or any firm-fleshed fish (halibut, haddock, etc.), cut in 1 inch cubes
 
6 cherry tomatoes
 
1 medium cucumber, cut in thick slices
 
1/2 cup cooked enriched rice

Directions

Make marinade by combining lemon juice, soy sauce, garlic powder and sweetener, and pour over fish in mixing bowl.
Let stand 30 minutes.
Drain, reserving marinade.
Thread fish, tomatoes and cucumbers alternately on skewers.
Broil indoors or over outdoors barbecue until fish is done, basting with marinade.
