Cod In Orange Lemon Sauce Recipe
Ingredients
| 4 firm-fleshed fish fillets such as pompano, snapper or halibut | ||
| Salt | 1/2 Teaspoon | |
| black pepper | 1 | |
| Minced parsley | 2 Tablespoon | |
| Garlic | 2 Clove (5gm), crushed | |
| 1/4 teaspoon ground comino | ||
| Olive oil | 2 Tablespoon | |
| Juice of 1/2 lemon | ||
| Juice of 3 medium-size oranges | ||
Directions
1 Sprinkle both sides of each fillet with salt and pepper. Place fillets in a large flat baking dish. Combine parsley, garlic, comino and oil and mix well. Pour half of the mixture over the fish, then turn fish over and drizzle remaining sauce over the second side.
2 Combine the orange and lemon juice and pour over all.
3 Cover and bake in a preheated 350°F. oven for 20 minutes, until the fish flakes easily with a fork.
