Cod Fillets Grapefruit Recipe
Ingredients
| 6 cod fillets or steaks | ||
| Seasoned flour | ||
| Butter | 2 Tablespoon | |
| Salad oil | 3 Tablespoon | |
| Cream | 1/4 Cup (16 tbs) | |
| Grapefruit | 1 Large | |
| 2 hard cooked eggs | ||
| Chopped parsley | ||
Directions
Roll the fillets or steaks in the seasoned flour.
Heat the butter and salad oil in a large cast iron frying pan.
Brown the fillets over medium heat, about 10 to 12 minutes, turning only once.
In a small saucepan heat 1 tablespoon (15 mL) butter, add the cream and the juice of 1/2 the grapefruit.
Chop the eggs and add.
Heat together, but do not boil.
Salt and pepper to taste.
Set the fish on a hot platter and pour the sauce over.
Sprinkle with parsley.
Cut the other half of the grapefruit in two and slice thinly.
Place around the fish.
