Cod And Potatoes Recipe
Ingredients
| 4 potatoes (Idaho or russet) Small amount of whole milk or skim milk and butter or margarine | ||
| Olive oil | 1/2 Cup (16 tbs) | |
| Garlic | 3 Clove (5gm), chopped | |
| Paprika | 1/2 Tablespoon | |
| Chopped fresh parsley, for garnish | ||
| Salt | To Taste, pounded | |
| Pepper | To Taste, pounded | |
Directions
1. Peel and cut up the potatoes. Boil them in salted water until they're soft. Drain and then mash. Add milk and butter or margarine to taste. Don't make the potatoes too soft. Season with salt and pepper. Keep mashed potatoes warm in the oven or in a pot. These should be made just before you need them.
2. Put the cod steaks in a heated vegetable or fish steamer with water. Cover and steam until they're firm but not flaking. It should take 7-10 minutes depending on the thickness of the steaks. Drain the water, but leave the fish in the steamer.
3. In a small pan heat the olive oil and add garlic; cook the garlic until nut brown. Add paprika and set aside. (The oil will turn a bright orange.)
4. Put scoops of mashed potatoes on individual plates and flatten them slightly. Place the pieces of drained cod on the potatoes. Then spoon the oil and garlic mixture over the cod, enough to drizzle down the sides.
