Coconut-Wine Filled Cookies Recipe

Ingredients
Coconut - 1 cup, shredded
Seedless raisins - 1 cup
Port wine - 3/4 cup
Sugar - 1 tablespoon
Dash of salt
Shortening - 1/2 cup
Sugar - 3/4 cup
Egg - 1
Vanilla - 1/2 teaspoon
Sifted flour - 2 1/4 cups
Double-acting baking powder - 1/4 teaspoon
Soda - 1/2 teaspoon
Salt - 1/2 teaspoon
Sour cream - 1/2 cup
Directions
MAKING
1) Mix together the coconut and raisins.
2) Pass through a food chopper.
3) Add in the wine, 1 tablespoon sugar, and a dash of salt.
4) Gently heat and cook till the mix is thickened. Keep stirring the mix, then cool.
5) Cream together the shortening and sugar till light and fluffy.
6) Mix in the egg and vanilla. Beat well.
7) Sift together the flour, baking powder, soda. and salt.
8) Add into the creamed mix, alternating with sour cream,
9) Beat well after each addition.
10) Refrigerate till firm.
11) Flour a board.
12) Taking little of the dough at a time, roll out to a 1/4 inch.
13) Use a 2 1/2-inch cutter on the dough.
14) Arrange half the cookies on an ungreased baking sheet.
15) Top with a heap full of coconut mix.
16) Add another cookie over the top.
17) Press down the edges together with a fork.
18) Place in the oven at 375°F and bake for 12 to 15 minutes.
