Ingredients
2 cups sifted flour
1/4 teaspoon salt
1 cup butter or margarine
1 cup sugar
2 cups shredded coconut
1 egg
How to make Coconut Slices
Sift flour and salt into a mixing bowl.Cut in butter with a pastry blender or 2 knives until mixture has consistency of corn meal.
Add sugar, coconut and egg.
Mix well with hands until dough holds together.
Shape dough into a roll, wrap in waxed paper and chill in refrigerator about 2 hours.
Cut off slices with a sharp knife, abou1/8 inch thick.
Place on ungreased baking sheet.
Bake in a moderately-hot oven (375° F) 10 to 12 minutes.
