Coconut Slices Recipe
Liven up your laid-back evenings with these delicious Coconut Slices. Make sure you have nice fresh coconut for this recipe. My experience is that these taste great with raspberry jam...but you can experiment and try out other toppings too! Let me know if you come across anything worth a try!
Ingredients
Sifted flour - 2 cups
Salt - 1/4 teaspoon
Butter or margarine - 1 cup
Sugar - 1 cup
Coconut - 2 cups, shredded
Egg - 1
Directions
MAKING
1) In a mixing bowl, sift together the flour and salt into a mixing bowl.
2) Using a pastry blender or 2 knives, cut in the butter till the mix resembles the consistency of corn meal.
3) Add in the sugar, coconut, and egg.
4) Mix well with hands till the dough holds together.
5) Form the dough into a roll and wrap in waxed paper.
6) Refrigerate for 2 hours.
7) Cut slice of 1/8 inch thickness.
8) Arrange on an ungreased baking sheet.
9) Place in the oven and bake at 375° F for 10 to 12 minutes.
