Ingredients
1/2 cup shredded coconut
1/2 lb pork sausage meat
Salt and pepper
1 egg, beaten
1 1/2 tablepoons oil
2/3 cup long grain rice
1 teaspoon curry powder
1 1/4 cups water
Parsley sprigs for garnish
How to make Coconut Rissoles With Curry Rice
Place the coconut in a bowl and cover with water.Leave to soak for 10 minutes.
Squeeze the excess water from the coconut and mix the coconut with the sausagemeat.
Add the salt, pepper and egg, then mix well together.
Shape into four rissoles.
Heat 1 tablespoon oil in a frying pan and fry the rissoles for 10 minutes on each side.
Drain on kitchen paper towels and keep hot.
Heat the remaining oil in a pan and fry the rice for 1 minute, add the curry powder and continue to cook for 3 minutes.
Add the water and some salt.
Bring to the boil, stir, cover and simmer for 15 minutes or until the rice is tender and the liquid absorbed.
Arrange the rice and rissoles on a warmed serving dish and garnish with parsley.
Serve with a green salad.
