Coconut Rice Recipe
My longing for Coconut Rice strengthened during high school days. I just love Side Dish recipes and this dish is my only favorite amongst them. A good way to use up Rice is to make some irresistible Coconut Rice. In my view, to call yourself a chef, you need to have a personal recipe of Coconut Rice, just like I do.
Ingredients
25 g (1 oz) (2 tablespoons) butter
175 g (6 oz) (3/4 cup) long grain rice
1 chicken stock cube dissolved in 450 ml (3/4 pint) (2 cups) boiling water
25 g (1 oz) (2 tablespoons) raisins
2.5 ml 1/2 teaspoon) salt
50 g (2 oz) (5/8 cup) desiccated coconut
Directions
1 Melt the butter in a pan, add the rice and fry gently for 2 or 3 minutes.
2 Stir in the hot stock, raisins and salt and bring to the boil.
Reduce the heat, cover the pan and simmer gently for about 20 minutes, until the rice is cooked.
3 Fluff up the rice with a fork, stir in the coconut and transfer to a heated serving dish.
Tip: This dish can be made in advance and reheated just before serving.
