Coconut Pompons Recipe
Coconut Pompons is something I look forward to whenever i visit my mum. Typically served with a nice hot cup of tea, this is truly a sweet midday pick-me up! Great to make a store away!
Ingredients
Margarine - 1 cup
Sugar - 1/2 cup
Vanilla - 2 teaspoons
Sifted flour - 2 cups
Salt - 1/4 teaspoon
Pecans - 1/2 pound
Coconut halves – chopped and shredded
Directions
MAKING
1) Combine and cream the margarine, sugar, and vanilla till fluffy.
2) Mix together the flour and salt and sift.
3) Add into the creamed mix and blend well till a soft dough.
4) Add the dough around the pecan halves, forming 1-inch balls.
5) Coat with the shredded coconut.
6) Arrange on a baking sheet.
7) Place in the oven and bake at 325° F.
8) Cool on a wire rack.
SERVING
9) Serve as a snack.
