Directions
Open coconut, discarding liquid.
With a sharp paring knife, remove the meat in chunks and grate it .
Pour boiling water over grated coconut and let stand 4 hours.
Place a sieve over a bowl, turn grated coconut into sieve, and press out the liquid.
Reserve grated coconut, if desired, to toast in the oven and use to decorate desserts and salads.
