Coconut Icing Recipe
Coconut is indeed a wonderful and versatile ingredient. A yummy treat, this coconut icing just goes to prove it. A delicious anytime treat. Try it and you are sure to love it. Do let me know how it turned out for you.
Ingredients
Sugar – 1 cup and 1 teaspoon
Coconut milk - 1/4 cup
Salt - 1/4 teaspoon
Cream of tartar - 1/2 teaspoon
Egg whites - 2
Vanilla - 1 teaspoon
Fresh coconut - 2 cups, grated
Directions
MAKING
1) Take a bowl and combine coconut milk with 1 teaspoon sugar. Spoon mixture over cake layers.
2) Combine salt, sugar, cream of tartar, 3 tablespoons water, egg whites and vanilla in top of a double boiler.
3) Cook for about 7 minutes, beating incessantly at high speed.
4) Stir in 1 1/2 cups coconut.
SERVING
5) Use Coconut Icing to frost on top and in between cake layers. Sprinkle cake with remaining coconut.
