Coconut Dreams Recipe
Ingredients
| 1/3 cup butter or other shortening | ||
| 1/2 cup Grape-Nuts | ||
| Firmly packed brown sugar | 1 Cup (16 tbs) | |
| 1 egg, slightly beaten | ||
| Vanilla | 1 Teaspoon | |
| Flour | 1 Cup (16 tbs), sifted | |
| 1/2 teaspoon Calumet | ||
| Baking Powder | ||
| Soda | 1/8 Teaspoon | |
| Salt | 1/4 Teaspoon | |
Directions
Melt shortening in saucepan.
Add cereal and cook about 1 minute.
Add sugar and mix well.
Cool.
Stir in egg and vanilla.
Sift flour once, measure, add baking powder, soda, salt, and sift again.
Add flour mixture to cereal mixture, a small amount at a time, mixing well after each addition.
With last addition of flour, blend in 3/4 cup Baker's Coconut, cut into fine pieces.
Spread into a greased 8x8x2-inch pan and bake in moderate oven (350°F) about 25 minutes.
Cool.
Cut into bars.
