Coconut Crunch Pie Recipe

Ingredients
3 eggs, separated
l1/2 cups sugar
1 teaspoon salt
1/2 cup milk
2 tablespoons soft butter or margarine
1/2 teaspoon almond extract
1/4 teaspoon lemon extract
1 cup shredded coconut
1 9-inch unbaked pie shell
Directions
Beat egg yolks well.
Add sugar and salt and mix well.
Stir in milk, butter, and extracts.
Fold in coconut.
Beat egg whites until stiff but not dry.
Fold into egg yolk mixture.
Pour into pie shell.
Bake in a moderate oven (350° F) 35 to 40 minutes or until a knife inserted in center comes out clean.
Makes one 9-inch pie.
