Coconut Cookies Recipe
These coconut cookies are wonderfully fragrant cookies made with dessicated coconut and almond extract. Made with a batter of eggs, flour, sugar, cream of tartar, and shortenening the coconut cookies are light and crisp and can be served with tea.
Ingredients
1 cup shortening (part butter)
1/2 cup brown sugar
1/2 cup white sugar
1 egg, beaten
1 tsp. almond extract
2 cups sifted all-purpose flour
1 tsp. baking soda
1 tsp. cream of tartar
1 cup dessicated coconut
Directions
Cream shortening with sugar.
Add egg and extract.
Sift flour, baking soda and cream of tartar and add gradually.
Then add finely chopped coconut.
Roll dough into small balls and press with fork.
Bake on greased cooky sheet at 300 F for 20 to 25 minutes.
