Coconut-Caramel Pudding Recipe
Ingredients
Flour - 7 tablespoons (heaped), sifted
Sugar - 4 cups
Salt - 1/2 teaspoon
Eggs - 4
Dry coconut – 2 cans (4 ounces), grated
Nuts - 2 cups, chopped
Directions
MAKING
1) Take a bowl and combine in it 3 cups sugar, flour and salt.
2) Take another bowl and beat eggs in it.
3) Add to the sugar mixture and mix well.
4) Brown the remaining sugar.
5) Gradually stir in about 1 quart boiling water and blend thoroughly.
6) Remove from heat and add to the egg mixture.
7) Return mixture to heat and simmer until thick, stirring constantly.
8) Remove from heat and add coconut.
9) Add the nuts and mix well. Chill.
SERVING
10) Serve Coconut-Caramel Pudding with whipped cream and caramel sauce, if desired.
