Coconut Bars Recipe
Coconut is indeed a wonderful and versatile ingredient. A yummy treat, this coconut bars just goes to prove it. A delicious anytime treat. Try it and you are sure to love it. Do let me know how it turned out for you.
Ingredients
Graham wafers - 18
Brown sugar - 1 cup
Margarine or butter
Milk
Graham wafer crumbs - 1 cup
Walnuts - 1 cup, chopped
Coconut - 1 cup
Maraschino cherries – 10, cut up
Confectioners' sugar - 1 cup
Vanilla - 1/2 teaspoon
Unsweetened chocolate - 1/2 ounces
Directions
MAKING
1) Take a buttered 8 x 12 inch pan and place graham wafers in it.
2) Take a saucepan and combine in it 1/2 cup margarine, brown sugar and 1/2 cup milk. Bring the mixture to a boil.
3) Remove from heat and set aside to cool.
4) Add walnuts, crumbs, cherries and coconut.
5) Spread mixture over wafers.
6) Take a bowl and blend in it 1 tablespoon milk, 2 tablespoons margarine, vanilla and confectioners' sugar. Spread the mixture on top of the cherry mixture.
7) Melt chocolate and drizzle over top.
8) Let stand overnight.
SERVING
9) Cut into bars and serve.
