Coconut Tarts Recipe
Ingredients
Few drops of red and yellow food coloring
1/4 cup flaked coconut
1 pkg. of our pie crust mix
Directions
Heat oven to 450° (very hot).
Add food coloring to coconut to tint orange.
Prepare pastry for One-crust Pie as directed on pkg.€”except just before removing dough from bowl, work in coconut.
Divide dough into 6 equal portions and roll into 4" rounds or 4" squares.
Pastry pieces may be fitted into individual pie pans or tart pans or they may be fitted over backs of muffin cups or small custard cups, making pleats so pastry will fit close.
Prick with fork and place on baking sheets.
Bake 8 to 10 min. (Watch closely as coconut will brown quickly when pastry is rolled thin.) When cool, remove from pans.
