Ingredients

 
Raw Shrimp- 2 pounds, shelled and deveined
 
Butter- 6 tablespoons
 
Almonds-1/4 cup, blanched and sliced
 
Flaked Coconut- 1/2 cup
 
Salt- 1 1/2 teaspoons
 
Tabasco- 1/8 teaspoon
 
Coconut Cream- 1 cup
 
Currants- 2 tablespoons

Directions

GETTING READY
1) In a non-stick pan melt half the butter sauté the almonds and coconut until light brown.
2) Cool and remove in a bowl.

MAKING
3) In a skillet, sauté the shrimps for 4 minutes.
4) Add salt, tobacco, coconut cream, currants and sautéed almonds and coconut.
5) Cover and simmer for 5 minutes more.
6) Serve hot.
