Coconut Rounds Recipe

Ingredients

 
1 cup all-purpose flour
 
1/2 cup butter or margarine softened
 
1/4 cup sugar
 
1 teaspoon vanilla extract
 
1/4 teaspoon salt
 
Water
 
1 egg white
 
1/2 cup flaked coconut

Directions

1. Into large bowl, measure first 5 ingredients and 1 tablespoon water. With mixer at low speed, beat ingredients until blended, occasion-ally scraping bowl with rubber spatula. Shape mixture into 3/4 inch balls.
2. Preheat oven to 350°F. In pie plate, beat egg white and 1 tablespoon water. Place coconut on waxed paper. Dip balls in egg white, then roll in coconut to coat. Place balls, 2 inches apart, on ungreased large cookie sheet. Bake 15 minutes or until golden. Remove cookies to wire racks to cool. Store cookies in tightly covered container.
