Coconut Rice Pudding Recipe

4 cups milk (or 3 cups milk and 1 cup coconut milk)
 
1/4 cup raw brown rice
 
1/2 teaspoon salt
 
grated peel of half a lemon
 
1/3 cup molasses or honey
 
1 cup grated, fresh coconut
 
1 tablespoon butter

Directions

In a 1 1/2 quart casserole, combine milk, rice, salt, lemon peel, and molasses or honey.
Bake, uncovered, at 300° F.for about 3 hours.
Stir occasionally with a fork.
After the second hour, add the coconut and butter
