Ingredients

 Water3 Cup (16 tbs)
 1 1/2 cups long-grain converted rice
 Curry powder1 Teaspoon
 Salt1 Teaspoon
 Coconut milk1/2 Cup (16 tbs), canned
 Toasted coconut1/2 Cup (16 tbs)
 Green onion1/4 Cup (16 tbs), chopped
 Dark raisins2 Tablespoon
 2 tablespoons light raisins
 Butter2 Teaspoon

Directions

Bring water to boil in medium saucepan.
Stir in rice, curry and salt.
Reduce heat, cover and simmer until all water is absorbed and rice is tender, about 20 to 25 minutes.
Add remaining ingredients, fluffing and mixing with fork, and heat through.
Coconut Rice may be prepared in advance and refrigerated.
Bring to room temperature before reheating.
