 Coconut1/3 Cup (16 tbs)

 Mandarin orange segments1 Can (10oz), drained
 Packed brown sugar1/3 Cup (16 tbs)
 Rum1/4 Cup (16 tbs)
 Butter/Margarine2 Tablespoon

Directions

1. Place coconut and margarine in 2-cup measure. Microwave uncovered on high (100%), stirring every 15 seconds, until lightly browned, 2 to 2 1/2 minutes. (Watch carefully after first brown flakes appear. Coconut continues to brown after cooking.)
2. Mix pineapple, oranges, brown sugar, rum and margarine in 1 1/2-quart casserole. Cover tightly; microwave on high (100%) until bubbly, 4 to 6 minutes; stir. Sprinkle with coconut. Serve warm or cold.
