Ingredients

 
Rice flour-1 1/4 cups
 
Sugar-1 1/2 cups
 
Salt-1/4 teaspoon
 
Coconut milk-8 cups
 
Eggs-4
 
Oil-1/2 cup

Directions

MAKING
1. In a large bowl, sift the flour, sugar and salt together to make a fine powder
2. Add the coconut milk while beating continuously. Add the eggs to the same mixture and form a smooth batter
3. In a large 7-inch skillet, heat2 tablespoons of the oil and pour enough batter to make a single pancake
4. Brown the pancakes on both sides
5. Roll up the pancakes and set aside the batter is used up

SERVING
6. Serve with warm maple syrup and honey.
