Simple Coconut Ice Recipe
This Coconut Ice recipe is from family cookbook and you can be rest assured that it works. I prefer to make Coconut Ice as a Dessert for all my family get-togethers. The goodness of Fruits makes Coconut Ice a healthy treat. In my view, if one calls oneself a good cook, one must have a personal recipe of Coconut Ice, just like I do.
Ingredients
1 Ib. sugar
5 oz. coconut
1/4 pt. milk
Colouring to taste
Directions
Mix the sugar and milk in a pan and bring to the boil, stirring until dissolved.
Boil gently until it reaches the soft ball stage.
Add the coconut and colour to taste or leave white.
Pour into a shallow greased tin, mark in squares, and leave to set.
If desired the mixture may be divided in two after the coconut has been added.
Pour one half into a tin, colour the other pink, and pour on top of the first lot to make two layers.
